Taira Osumi 大住平

Taira was born in Kumamoto, a quiet and peaceful city in the southwestern province of Kyushu. The city was known for its abundance of fresh fruit, tonkotsu ramen, and a large variety of seafood; his childhood was filled with the joys of small town simplicity and gourmet food around every corner. 

At the young age of 18, Taira’s journey as a sushi chef began at a renowned Japanese restaurant in Ginza, Tokyo. After four long years of continuous dedication and commitment, he finally acquired the basic skills and experience in the art of sushi making. His passion for sushi and love for constantly taking on new challenges led him to an upscale sushi restaurant in Vancouver, British Columbia where he would spend close to a decade polishing and further developing the abilities he initially gained in Japan. This same passion led him to seek employment at one of Toronto’s best Omakase restaurants; entering a world in which only the best of the best could qualify.  Eventually, a new opportunity encouraged him to relocate to Calgary where his knowledge, skills, and leadership earned him the position of head chef of Sho.

As fate would have it, his most recent venture has presented him with the opportunity to continue creating phenomenal dishes at Sho’s very own Omakase. Chef Taira is a culinary professional who believes in the importance of quality. Sho is working with the best establishments in Japan to healthily source the freshest seafood and fish. The air shipments are made daily to ensure the highest quality for Omakase guests. Using the diverse skills he has acquired in his career, Taira is devoted to creating an Omakase that promises two core principles which run deep in his roots - good food and happy people.
